Gourmet Recipe - Fish a la Duchesse

Ingredients: 1/2 pound fish fillets (such as haddock, cod, or perch) 1/4 cup all-purpose flour Salt and black pepper to taste 1 tablespoons butter 1 tablespoons olive oil 1/4 cup dry white wine 1/4 cup heavy cream Fresh parsley leaves for garnish

Directions: 1. Preheat oven to 450 degrees F (230 degrees C). 2. Dust fish with flour, salt, and pepper. In a large ovenproof skillet over medium-high heat, melt butter with olive oil. Add fish to pan; cook for 2 minutes per side or until browned. 3. Remove from heat. Add wine and cream to pan; bring to a boil. Place skillet in oven; bake for 8 minutes or until fish flakes easily when tested with a fork. Garnish with parsley leaves.

Marinated Trout a la Duchesse

Ingredients: -1 trout, gutted and scaled -lemon juice -white wine vinegar -dried tarragon -salt -pepper -olive oil -1 shallot, minced -1 garlic clove, minced -2 tablespoons unsalted butter

For the marinade: In a small bowl, combine 2 tablespoons lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon dried tarragon, 1/4 teaspoon salt and 1/8 teaspoon pepper. Place the trout in a large resealable bag and pour in the marinade. Seal the bag and turn to coat. Marinate for at least 2 hours or up to 12 hours, turning occasionally. Remove the trout from the marinade and discard the marinade. Heat a large nonstick skillet over medium heat. Add 1 tablespoon olive oil and swirl to coat. Add the trout and cook for 4 minutes per side or until golden brown and cooked through. Remove from the skillet and keep warm. In the same skillet, add the shallot and garlic and cook for 2 minutes or until soft. Add the butter and melt over low heat. Serve with the trout.

As a proud French Duchesse, I love to cook and eat fish dishes. They are light, healthy and always so delicious - perfect for any occasion! Here are some of my very favorite recipes, all adapted to make the most fantastic dishes you'll ever taste!

Fried Fish with Tartar Sauce

Ingredients: - 1/2 cup flour - 1/2 teaspoon salt - 1/4 teaspoon paprika - 1/4 teaspoon black pepper - 1/4 teaspoon garlic powder - 1/4 cup milk - 1 egg - 2 tablespoons vegetable oil - 1 pound cod fillets or other firm white fish fillets, cut into serving pieces - Tarter sauce (homemade or store bought) Instructions:

  1. Combine flour, salt, paprika, pepper, garlic powder and milk in a shallow dish. Beat egg in a separate shallow dish.
  2. Dip fish in the egg mixture, then coat with flour mixture. In a large skillet over medium heat, heat oil until hot. Add fish; cook for 3 minutes per side or until golden brown and cooked through. Serve with tartar sauce. Yummmm!

Baked Fish with Lemon Butter Ingredients: -1/2 cup butter, softened –1/3 cup lemon juice –1 tablespoon parsley flakes –1 teaspoon grated lemon peel –1/4 teaspoon salt –1/4 teaspoon paprika –1/4 teaspoon black pepper –1 pound cod fillets or other firm white fish fillets Instructions: Preheat oven to 350 degrees F (175 degrees C). In a small bowl, combine butter, lemon juice, parsley flakes, lemon peel, salt, paprika and pepper. Place fish in a greased 11x13 inch baking dish. Spread butter mixture over the top of the fish. Bake for 20 minutes or until fish flakes easily when tested with a fork. This dish is simply amazing - give it a try today!

How to Make Delicious Fish a la Duchesse

Ingredients:

  • 1 fish fillet (5-6 oz), skinned
  • 1 tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. paprika
  • 2 tbsp. butter
  • 2 tbsp. milk
  • 1/4 cup chopped green onion

Directions:

1) Preheat oven to 375 degrees F (190 degrees C). 2) In a shallow dish, combine flour, salt, and paprika. dredge the fish in the flour mixture to coat well. 3) In a small saucepan, melt butter over medium heat. Stir in milk until smooth. 4) Pour mixture over fish. Sprinkle with green onion. 5) Bake for 20 minutes or until fish flakes easily when tested with a fork.

A La Duchesse - Gourmet Style Fish!

When you hear the term "gourmet," what comes to mind? Expensive, perhaps difficult to make dishes? The reality is that there are many easy and economical recipes that can be considered gourmet. And one of our favorites is this simple but elegant fish dish, A La Duchesse.

This recipe is quite versatile, as any firm-fleshed white fish such as cod, pollock, tilapia, or trout can be used. Simply follow the easy steps below, and your dinner guests will be duly impressed!

Ingredients: -1 lb. fish fillet(s) -1/4 cup flour -1 tablespoon butter -1/2 cup milk -1/4 teaspoon salt -fresh parsley for garnish (optional)

Instructions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with butter. Dust the fish fillets with flour, and place them in the prepared dish. Dot the top of each fillet with 1/2 teaspoon butter. Pour milk over the fillets. Sprinkle with salt and parsley if desired. Bake in a preheated oven for 25 minutes or until tender and lightly browned.
